Join us for our monthly Chef’s Dinner with optional wine pairings! You could try to recreate it, but you really HAVE to be here for the convergence of cultures as unlikely as a flamenco dancer at a square dance - the lingering taste of wood smoke and Spanish wine will take you on a journey where the flavors of Spain find a home here in the quiet Appalachian mist at The Copperhead Lodge.

Start with Tapas - a parade of small miracles - Jamon Iberico, sliced so thin it nearly dissolves on the tongue, with it’s acorn laden flavor a salty prelude to the evening. Suckling Pig, roasted low and slow in the wood-fired oven. The skin, a crackling symphony, giving way to meat so tender it seems to surrender to the fork. A robust Granacha that speaks of old vines and sun-baked earth. Or perhaps a deep brooding Rioja Reserva, its stone fruit and cherry notes holding their own against the rich pork.

The Conversation flows as freely as the wine at our Chef’s dinners. By the time the Crema Catalana arrives, you’ll know it’s about friends enjoying time together over good food and drink.

Gather in the great room, the nostalgic scent of pine and peppermint in the air. Cookies, abundant, imperfectly shaped stars and trees, each one carrying the quiet dignity of a simpler time, a time before high-fructose corn syrup and mass production. And then, he appears! The Old Man himself, not in a rented beard, but a man who’s eyes truly twinkle with love for the season. He sits by the fire, the flames dancing in his eyes. He speaks, not of commercial goods or holiday sales, but of a quiet workshop, of simple wooden toys, of reindeer with names that sound like the wind whistling through the trees. For a short time, the cynicism of the modern world melts away like butter on a hot biscuit. An experience you cannot purchase in a store, but one that occasionally, if you are lucky, finds you. A meticulously curated dinner, featuring Texas BBQ brisket and other inspired fare, with a tribute performance that channels the authentic spirit and powerful vocals of Patsy Cline herself.
